Update: I had big dreams that I could put together a newsletter on the subject and food service operators would be knocking down my door for copies. Didn't work out that way. So, as I find the time, I will be putting articles on this site for free use by anyone.
These will give every food service manager or Chef vital information to enable them to get ahead of the thieves and cut them off at the pass. Rampant theft in both the kitchen and front-of-the-house has bankrupted many food service operations. Controlling theft is a continuous process of maintaining security controls that are properly set up to combat old scams and thefts and anticipate, as much as possible, new scams by employees.
I've lived among the riffraff, talked to the thieves, the robbers, the burglars, the white-collar managers, some of whom embezzled tens of thousands of dollars-- even bankrupting some businesses. Hell, I just might be qualified enough to suggest ways to deal with all levels of sophistication in theft and embezzlement from food service operations.
